The Candidate Requirement
We are looking for an accomplished Sous chef to help oversee the brigade at this Stunning boutique property that is just coming to the end of a complete multi-million pound refurb. We are looking for a number 2 to oversee the operation cooking to a 2-3 rosette level from “farm to fork” style menus, changing daily to use the freshest of local and estate ingredients. There are loads of exciting future plans including a cookery school and the project has massive PR behind it really is a cracking position. Somebody with Asian (Japanese) food interests would be great but not essential. You should also be a good people manager as well as an established cook with a modern outlook and have an understanding of cost control and profitability, GP’s and hygiene legislation.
